Hygiene “Hygiene Test Game”

> Objectives

  • Identify and apply up-to-date hygiene rules with respect to article 5 of regulation (EC) N° 852/2004
  • Know the risks linked to food-borne illnesses
  • Adopt good hygiene practices at the work station

> Target audience

  • Everyone in direct contact with food production

> Pedagogy

  • Presentation of theory (4h), and practical application (3h) using a “Hygiene Test Game” based on the principle of forward movement (‘marche en avant’) for institutional or industrial catering

  • Test to validate acquired know-how
